Butterscotch Biscuits


Butterscotch Biscuits


This is a great breakfast treat for those high energy days.


This recipe will transform an ordinary can of cheap breakfast biscuits into a sweet treat. 

The Ingredients 

1-cup brown sugar
2 -tablespoons water
3 -tablespoons unsalted butter
½-tablespoon vanilla extract
1 can of biscuits (I prefer the 8 count size)

 Pre heat oven according to the directions on the can.

Preparation 


Measure the brown sugar into a 2 cup microwave safe measuring cup
Add water

We are going to use the microwave to dissolve the sugar and make butterscotch syrup 

During the microwave heating process, the goal is to microwave for a minimum of 2 1/2 minutes stirring every 15 seconds.  Fifteen seconds may be too long for your microwave if so reduce the time from 15 seconds to 10 seconds but increase the number of time that you microwave from 4 to 6
 Microwave in short 15-second stages stirring after each 15-second cycle approx four times until the sugar starts to dissolve.  Take extreme care during this process.  The mixture will boil over the edges of the container.  The hot syrup will instantly burn if it comes in contact with the skin. 
Add butter stir then repeat the microwave 15-second cook then stir for an additional four times.
Add vanilla stir with caution the hot syrup mixture will probably boil from the addition of the alcohol in the vanilla.
Microwave for an additional 15 seconds.  Stir the microwave and additional 15 seconds.
The sugar should have dissolved if not microwave another time or two in short 10 second burst stirring between cooking times.
Pour approx 2/3 of the mixture into a 10-inch cake pan place biscuits on the pan on top of the mixture.
  
Pour the remaining mixture over the top of the biscuits.



Cooking

Bake according to the instruction on the biscuit can. 
When done place a plate or platter on top of the biscuits and turn over, like you were making a pineapple 
upside-down cake.  Lift the cake pan off the biscuits.  They are ready to eat.
